Ingredients
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ¼ tsp salt
- 1 ½ cups ripe bananas (4-5 bananas), mashed
- 6 tbsp unsalted butter, melted
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup chocolate chips
- 2 tbsp cashew nut pieces

Directions
- Preheat the oven to 180 degrees Celcius.
- In a medium bowl, sift the flour, baking soda, and salt.
- In a separate bowl, whisk the banana, butter, granulated and brown sugar together until well-blended. Add the egg and vanilla.
- Add the flour mixture to the banana mixture and stir just until blended.
- Add the chocolate chips and stir in just until the chocolate chips are incorporated into the batter.
- Grease the loaf pan.
- Scrape the batter into the loaf pan.
- Sprinkle the cashew nuts and a little sugar on top.
- Bake for about 1 hour, until a tester inserted in the center of the cake, comes out clean.
- Cool the cake for about 10 minutes in the pan, then turn it out to cool completely on a cooling rack.
