  1. Preheat the oven to 180 degrees Celcius.
  2. In a medium bowl, sift the flour, baking soda, and salt.
  3. In a separate bowl, whisk the banana, butter, granulated and brown sugar together until well-blended. Add the egg and vanilla.
  4. Add the flour mixture to the banana mixture and stir just until blended.
  5. Add the chocolate chips and stir in just until the chocolate chips are incorporated into the batter.
  6. Grease the loaf pan.
  7. Scrape the batter into the loaf pan.
  8. Sprinkle the cashew nuts and a little sugar on top.
  9. Bake for about 1 hour, until a tester inserted in the center of the cake, comes out clean.
  10. Cool the cake for about 10 minutes in the pan, then turn it out to cool completely on a cooling rack.
