  3. Gradually add ice water to the mixture, starting with 1/4 cup and adding more as needed, until the dough comes together in a ball. Be careful not to overwork the dough, as this can make it tough.
  4. Turn the dough out onto a lightly floured surface and gently knead it a few times to form a smooth ball. Divide the dough into two equal portions and flatten each portion into a disk shape.
  5. Wrap each disk in plastic wrap and refrigerate for at least 30 minutes, or up to 2 days.
  6. When you’re ready to use the dough, remove it from the refrigerator and let it sit at room temperature for 10-15 minutes to soften slightly.
  7. On a lightly floured surface, roll out one of the dough disks to a thickness of about 1/8 inch. Make sure to roll the dough out evenly and to the size needed for your pie dish.
  8. Carefully transfer the rolled-out dough to your pie dish, gently pressing it into the bottom and sides. Trim any excess dough from the edges and refrigerate the crust for another 10-15 minutes.
  9. Repeat the rolling and shaping process with the second dough disk, if needed, for a double-crust pie.
  10. Fill your pie with your desired filling, add the top crust if using, and bake according to your recipe instructions.
