This vanilla cupcake recipe makes about 12 cupcakes and requires basic ingredients: all-purpose flour, softened butter, granulated sugar, eggs, milk, baking powder, baking soda, salt, and vanilla extract. This vanilla cupcake recipe is inspired by one of my favorite books: Hello, Cupcake! by Karen Tack and Alan Richardson.
Preheat the oven to 180 degrees Celsius. Line a cupcake tray with 12 paper liners. In a medium bowl, mix the dry ingredients: flour, baking powder, baking soda, and salt.
Combine the milk, vegetable oil and vanilla extract in a small bowl.
Using an electric mixer on medium speed, beat the butter and sugar until light and fluffy, about 2 minutes. Add the eggs, one at a time, and beat well after each addition.
Switch the speed of the electric mixer to low. Add the dry mixture and the milk mixture alternately in batches. Begin and end with the dry mixture. Beat just until blended.
Transfer the batter to each paper liner, filling up to 2/3 of each liner. Bake for about 15 to 20 minutes, until golden and a toothpick inserted in the center comes out clean. After about 3 to 5 minutes, place the cupcakes on a wire rack to cool completely.
Perfect Vanilla Cupcake Hacks
- Set these ingredients at room temperature: milk, eggs, and butter to maintain the consistency of the cupcake batter.
- Add the flour mixture and the milk mixture alternately to mix the batter thoroughly.
- Avoid overfilling. Fill the cupcake liners up to 2/3 full only.
